Yesterday I showed you guys how to make quick and simple Naan bread. Today I thought I would show you how I make something that goes real well with naan bread , Sweet Potato Curry!
Here are our ingredients.
First we need to chop our onion.
We are going to add the chopped onion to 2 tablespoons of coconut milk on a medium heat.
Let the onions cook until they are nice and soft and somewhat translucent...
Now its time to add our herbs and spices.
First 1 teaspoon of turmeric.
Next 1 teaspoon of coriander.
1 teaspoon of Thyme.
Next up we add 2 tablespoons of curry powder
Next im adding 1 tablespoon of Chilli pepper puree
Then add 1 tablespoon of tomato puree.
Next add some chopped garlic
Mix everything up and take a moment to enjoy the overwhelmingly beautiful smell :).
Now its time to add our chopped sweet potato and carrot to the mix.
Mix up the chopped vegetable's with the herbs and spices.
Add 2 cups of coconut milk to the pot
Then 1 cup of boiling water.
I have a lot of fresh coriander left from making naan bread yesterday so I chopped some into the curry.
When the potatoes are soft enough to break apart with the spatula its time to add the split peas or lentils if you prefer. I love the taste of Yellow split peas in soups and curries so I decided to use them for this recipe.
While the curry was thickening up I prepared a garlic and coriander naan.
Looks like our curry is pretty much ready.
As an experiment I tried stuffing some into a naan bread and cooking it like a calzone pizza.
This turned out exceptionally well. Im thinking this is another idea for quick and easy street foods that taste amazing. I would happily buy one of these.
