Well Hivers back at the start of April I ordered a Japanese Huusk cooking knife online well to be honest I cocked up and ordered 5 by the time I noticed it was too late to stop the order anyway 3 weeks on and nothing with emails bouncing and the web site now sending me all over the place I was beginning to think I'd been scammed so back on to Paypal to start a grievance and low and behold 2 days later I get an email and a tracking number but it was still over 2 weeks before they arrived. In a very nice presentation box with a magnetic catch and cut foam lining.
So what are they like after all that wait the simple answer is, a very good bit of an odd shape with a curved chunky stained oak handle.
But comfy and easy to hold and the blade is quite heavy.
With a hand-forged appearance but I'm sure it's not.
It is amazingly sharp though which brings me on to the Sashimi which is a perfect test for a new knife.
Many people shy away from eating raw fish at home because of the worms issue but they are happy to eat sashimi prepared by some anonymous chef in a Japanese restaurant.
So let's look at the worms issue for a start. Yes raw fish can have worms and even an expert is hard-pressed to remove them by hand so what can you do. The simple answer is temperature either cooking or freezing will kill them off but oddly enough not Cavechi they will survive an acid environment quite well so gravlax isn't the answer. Once frozen and any worm larvae killed off they can be picked out by hand or with tweezers. Antiskid larvae range from brown to white in color and look like watch springs about 1cm in length, Tapeworm larvae form a cyst like a small grain of rice stuck in the flesh. I do hope I haven't put you off sashimi or sushi.
Let's try cutting some Ginger first. Very easy the chunky handle gives great control for cutting really thin slivers.
And the Tuna was cut just as easy I like my sashimi cut quite thin and there were no issues with the really sharp blade.
So just add some dark soy sauce and a bit of wasabi paste for the perfect afternoon snack with a glass of Ashai.
