Norwegian Strawberries are finally in the stores. Because of Corona, the berries is really expensive this year. We are talking about 7-8$ for one basket.
I did not have any problems to buy a basket of Norwegian strawberries the last years, but the prices are insane. The Nederlands and Belgium Strawberries are cheeper and also good, but not as sweet and amazing as the Norwegian ones.
To start with:
I bought two baskets of strawberries, and a powder that makes them easier to freeze. It's also a preservative. Follow the instructions on it.
I divided them in two sections: the ones that I am putting in a blender, and some that are cut in three pieces.
You don't have to cook them, only blend it and put it in containers.
I put the blended strawberries and the cut strawberries in a pan, and cook them around 10 minutes on a medium/low temperature. Don't bole them more than 5 minutes. Then remove the pan from the stove and cool it off.
I always clean the containers as much as I can. If you don't, it's easier to grow mold on the strawberry jam. Don't put a warm jam in the fridge or the freezer. Make it cool off in room temperature, with the covers half way off. Like shown in the picture. And then put it in the freezer and fridge!
You can buy containers that are ment for making strawberry jam, that you also can freeze. But I have not had any problems to put them in plastic containers, and freeze them. I think it's often the best to use what you have in your kitchen. Don't spend money on something you only make once a year.
I don't add any sugar, because the strawberries are sweet. But you can add as much sugar as you want to.
