Greetings Hivers, I hope and wish for you to be healthy and fine wherever you are.
Today I'm going to share with you a very simple, yummy and healthy recipe which is very easy to make, takes very less time in preparation as well as in cooking. This dish is a heart favorite for everyone at our house including the kids. Even the kids themselves make it when we are not around. The ingredients used in it are usually available in every house at all times. Even if you don't have any, you can get them from your local grocery store easily. Personally, for the veggies shopping, I prefer local street vendors in our area for two reasons below:
1.Their veggies will go bad if we don't buy from them. They should not be made to bear this loss by not buying from them.
- They are usually selling their stuff at a relatively lower price.
Ingredients
Now let me share with you the list of the ingredients which is as follows:
Potatoes 300g or 2 medium sized
Tomatoes 100g or one medium sized
Onions 100g
Fresh green chillies to taste
Salt ⅓ tsp or to taste
Black pepper ⅓ tsp or to taste
Olive oil 3 tbsp, you can substitute it with any other cooking oil of your choice
Water ¼ cup
Method
Cut the potatoes into thin slices of any shape you like. I prefer cutting them into ⅓ inch thick and 1.5 inch long slices as shown in the picture.
Chop the rest of the vegetables including onions tomatoes and green chillies. Now on a medium flame, place a shallow fan preferable a saucepan. Add olive oil to the saucepan and then add the chopped onions to the heated oil. Fry the onions for 3 minutes until translucent and soft.
Now add chopped tomatoes and potatoes to the sauteed onions. Also add salt and black pepper at this stage. Stir fry the potatoes for 1-2 minutes.
Finally add water and put the lid on. Reduce the flame to a medium low and cook potatoes for 15 minutes or until completely cooked.
Once the potatoes are cooked, add eggs while stirring constantly so as not to burn the eggs keeping the flame on a medium-low.
Once the eggs are cooked, add chopped green chillies . Put the lid on and turn the flame off. Leave it for 1-2 minutes. Now the dish is ready to serve.
Serving suggestions
You can serve this dish with:
1.Roti/chapati
- Pita bread/plain bread
3 or just eat it with a spoon like I do:)
