Hello again lovely people of Hive.
Summer is starting to turn the heat up in the Philippines. It's 33⁰C but feels more like a 35⁰C, or even higher. People are going on picnics and outings. The local resorts are already swamped with people; never mind that we are still in the middle of a pandemic. And I can really relate to them, the heat is making me thirsty, longing to go to the river for a dip at a cool running body of water and just hang out with friends. Anyways, enough about my day, this post is about #plant-based eating, and cooking up a quick meal for lunch.
Looking at the refrigerator, I discovered a few ingredients that caught my eyes. Being a fan of simple meals, I immediately thought about what I wanted do do with the ingredients that I have on hand for a #meatless-monday.
These three (3) will be the main ingredients. Pechay, Tofu, and Ginger.
1. Clean and cut to desired shape and size.
I just julienned the ginger, cut the tofu into cubes, and the Pechay in about one inch long pieces.
2. Heat two (2) tablespoons of coconut oil in a pan and stir fry the ginger. Add a dash of salt and pepper, and just enough sugar to taste it when you eat the ginger. Add in the tofu after one to two minutes. Add a dash of soy sauce and another sprinkling of brown sugar for the tofu.
Move on to the next step when you see the tofu caramelizing and turning brown.
3. Put in the pechay and stir-fry for around five (5) minutes. Add more soy sauce, salt and pepper, and mushroom powder to taste.
Check the pechay and let it cook some more if you want it thoroughly cooked.
4. Transfer to a bowl.
This looked delicious but somehow I think it won't be enough for me. LOL.
5. I found some meat-free sausages in the freezer, sliced one up, and fried it a little where I cooked the pechay also.
Now, I'm feeling hungrier.
6. Finally, I scooped some steamed white rice and devoured the #vegetarian dish I prepared for lunch.
I'm already too hungry to hold my phone steady.

That was a good, simple, and delicious meal. So, this is my #foodie post for today. I hope that you also had a good meal.
