Custard can be a simple dessert or a very grand affair:-
- A simple Jelly & Custard, festive Trifle, Comforting Apple Pie & Custard, Teatime Custard Slices, Portuguese Custard Tarts, Danish Custard, delectable Creme Brulee fit for royalty, plus a host of other custard inspired desserts.
Variations too many to mention, such as a thin pouring custard, a light custard flan, a glossy medium custard as well as a rich pipeable Creme Patissiere or Vanilla Custard Cream.
I will be using the latter to fill my featherlight sponge cake layers and to cover the Gateau; lightly toasted flaked Almonds and tiny speckled Easter Eggs will be used to add the final festive touch.
Featherlight Sponge
- 5 Eggs separated
- 250ml Castor Sugar
- 5ml Vanilla
- 100ml Ice Water
- 250ml Cake Flour
- 75ml Cornflour
- 5ml Baking Powder
- 2ml Salt
Beat Egg yolks & Sugar together till thick and pale.
Slowly add Vanilla and ice Water.
Sift dry ingredients together and gradually fold into egg mixture.
Beat Egg Whites till stiff and foamy, fold into batter.
Gently pour into two sprayed and lined cake pans.
Bake for 25-30 min at 180°C.
Turn out onto wire racks and leave to cool.
Creme Patissiere
- 375ml Full Cream Milk
- 200ml Longlife Cream
- 125ml Sugar
- Vanilla Bean or Vanilla Extract
- 4 Tbsp Custard
- 2 Egg Yolks
Heat Milk, Cream and Sugar, adding Vanilla Bean or Extract.
Mix Custard Powder with Egg Yolks and a little extra Milk, add to hot milk mixture and whisk till it starts to bubble and thicken.
Leave to cool and use to fill and cover cake.
Garnishes
- 100ml toasted flaked Almonds
- Small Speckled Easter Eggs
Cover sides with toasted flaked Almonds and decorate with tiny speckled Easter Eggs.

Well, all that was left of this gorgeous creation was just one slice of day-old-but-still-delicious-Gateau, so here it is!
We enjoyed our Easter Vanilla Custard Creme Gateau on this Palm Sunday which commemorates Jesus' triumphal entry into Jerusalem and also marks the end of Lent; a whole week before Easter!
