Here comes another simple comfort food recipe. Since lately, I notice I have been having acid reflux, I decided to cut my rice and egg consumption.I also stop buying food outside and cook for myself especially for dinner. Currently I am on intermittent fasting day 6 & it has been a great journey so far. I will write what I eat later and how it affects me. But for now, I am sharing this comfort, low seasoned rich protein sweet corn chowder.
Prep time : 10 minutes Cook time : 35 minutes Portion : one serving calorie : about 800 calories for one serving
Ingredients
Protein
- 3 Tbsp crab meat
- 0.160gr salmon
- 0.100 gr meatball (chopped & optional)
Spices
- 1 onion finely chopped
- A pinch of salt
- A pinch of pepper
- A pinch of oregano
Cream
- 1 tablespoon corn starch
- 1 tablespoon butter
- 300ml water
Vegetable
- 1 carrot chopped
- 1 cob of sweet corn kernel chopped off
How to cook
First : melt 1 tablespoon butter, add the chopped onion, 3 tablespoon crabmeat, saute them until the onion turn golden about 3 minutes
Second : pour 300ml water, add corn starch while mixing slowly
Third: Add sweet corn kernels, carrot, salmon,and meatball
Fourth : Stir them while adding the seasoning
Fifth : Boil and simmer the soup for about 25 minutes, serve while it's hot
Garnish : oregano and sesame seeds
That bowl is for one serving though you can also share it with someone. I previously break my fasting with 3 spoons of oatmeal + a banana + 3 digestive cookies (70calories). Then, I ate a digestive cookies before I went shopping and to avoid causing acid reflux.Right after I reached home, I made that sweet corn chowder, instead eating my regular meal, rice + egg + eggplant + tempe and tofu and it seems that my acid reflux is not acting up. So, hoping I can finally find out what food to avoid and no, I am not giving up my coffee.
