Maja Blanca
is a Filipino dessert with a gelatin-like consistency made primarily from coconut milk. Also known as coconut pudding, it is usually served during fiestas and during the holidays, especially Christmas.
Maja Blanca can be topped with cheese or nuts, but I chose to top it with Latik.
Latik
refers to two different coconut-based ingredients in Filipino cuisine. In the Visayan region it refers to a syrupy caramelized coconut cream used as a dessert sauce. In the northern Philippines, it refers to solid byproducts of coconut oil production, used as garnishing for a variety of desserts.
Ingredients needed:
For the Maja Blanca
- 1 cup cornstarch
- 2 cups coconut milk
- 150 ml condensed milk
- 1 1/2 cup corn
- Sugar (add as needed)
- 1 cup of water + 1 cup to dissolve cornstarch
For the Latik
- 1 cup pure coconut milk
For the Maja Blanca:
Prepare all the ingredients needed.
Combine everything in a pan on low heat, except the corn starch, and set aside 1 cup of water.
Mix thoroughly until the sugar melts. Taste the mixture to check whether it's sweet enough for you. Sugar can be added as needed.
Turn on the heat and bring it to a boil over medium heat.
Meanwhile, in a separate bowl, dissolve the cornstarch with the saved water (1 cup). Make sure there are no lumps. Place aside.
When the mixture is boiling, stir in the cornstarch continually and vigorously. Cook for at least 5 minutes, whisking occasionally, to avoid burning and sticking at the bottom.
Transfer to a tray once done. Set it aside and let it cool.
For the Latik:
Cook over low heat until the mixture curdles and the oil separates. Strain the oil from the curds when it starts to turn into light brown. Latik are the brown curds.
Then add it to your Maja Blanca as a topping.
