Well hello, stranger
It's been insanely hot in our home town the past weekend... And when it gets hot one needs ice cream 🍨! I'm picky with mostly everything I eat... I try to deny but will tell you I'm a handful when it comes to food.
A few days ago I found a quick and easy ice cream recipe. I've never made ice cream before, but my mother always tells stories of "the good old days" and how they used to make ice cream, so when I saw the recipe I had to try it.
So today on a scorching hot day I made my way to the shops to go and buy ingredients. It is a quick and easy recipe with only four ingredients the most important thing you need is cream.
I know it's not fancy ice cream but it's still worth it... Well for me 😅. So let me know if you try it and if you'll do it again. The recipe only makes a small amount so if you want to make it for a few people I would suggest doubling the recipe. It takes less than 10 minutes to prep and about 3-4 hours to set. If you want to enjoy it with a cake/ tart I suggest making it at least 2 hours before you start baking a cake/ tart.
What you'll need
You will need a Mason jar or a few depending on how many flavours you want to make. A flat container to store it in (it is difficult to scoop the ice cream out of the jars). And measuring caps. I decided to make two flavours, so I cleaned two jars. Yes, I know it's not Mason jars, but hey it's a jar 🤣
Ingredients
- 1 cup Fresh heavy cream
- 1 and a 1/2 tbsp white sugar
- 1 and a 1/2 tsp vanilla extract (or any other extract you want to try. I tried lemon 🍋!)
- Pinch of salt
What to do
1 - Clean your jars!
2 - Go and buy cream since you don't have it at home 🤦🏼♀️.
3 - Add 1 cup of cream to each of your jars.
4 - Sprinkle in the 1 and 1/2 tbsp of sugar 🧚🏼♀️
5 - Add your chosen extract. I think this will be a trial-and-error step. I added 1 and 1/2 tsp of the lemon and will suggest you only add 1 tsp. This might be different for rose water where you would want to add 2 tsp. So if you're using something other than vanilla, have a bit of fun and experiment.
6 - Add a pinch of salt for good luck 🤞.
7 - Now the fun begins!!! You'll have to shake your jar for around 5 min. Ensure the lid is nice and tight otherwise you'll end up spilling the soon-to-be ice cream like me 😅. The mixture begins to thicken after a few minutes.
8 - Place your shaken ice cream in the fridge! I waited 2 hours, but I suggest you rather wait 3-4 hours. I took it out a bit too early.
9 - Serve your yummy ice cream with something else. My mom had made "Tipsy test" (which is a brandy dessert) earlier this week so we enjoyed it alongside the ice cream.
I didn't really fancy the vanilla, but I'm not a fan of vanilla in general. The lemon one was quite nice! Now before you go and make this a few bits and pieces: it's basically just frozen cream, so don't expect it to be fancy ice cream store quality. If you're not able to handle a lot of cream... Stay clear!
