This is my first time writing to this community. I want to tell you about dumplings - the Ukrainian national traditional dish. In my country (Ukraine) everyone loves dumplings.
Dumplings are made from dough and it is interesting that the filling can be any: fruits, berries, meat, vegetables, cabbage, cheese and more.
I made dumplings with potatoes.
To start cooking you need to make the dough. There are different ways to prepare dough for dumplings: water, kefir, milk. I choose the way with kefir. What do we need for this? First, I knead the dough in the oven. Here are the ingredients I load into my bread machine:
- Flour - 500 grams,
- Egg - 1 piece,
- salt - 0.5 teaspoons,
- Kefir - 300 ml.
- 1 teaspoon soda.
While the dough is kneading in the oven - your indispensable kitchen helper - you can cook potatoes for stuffing. 🥔
Potatoes need to boil and mash. Also, according to many recipes, fried onions are added to potatoes - I did the same. Mashed potatoes are prepared for 20-25 minutes: Boiled potatoes mash, adding a little milk. While the potatoes are cooking, fry the onions as well.
When our dough is already kneaded in the oven, take it out to roll out and sculpt our dumplings.
At this stage, I have already put on the fire a pan of water, because when cooking dumplings, everything needs to be done quickly and in parallel. While I glue the first batch of my products, the water will boil and I will be able to throw them to boil.
Squeeze round molds out of the dough with any convenient glass. ⬇️

First you need to glue the edges firmly so that they do not spread during cooking. ⬇️
And then I give the design to each dumpling, sticking it like that. ⬇️
Since I will have a lot of dumplings, I will throw them into the water in turn, 15 pieces. When my first batch is ready, I send them to boiling barely submerged water for 2-3 minutes.
After the dumplings start cooking, I have to do all the next ones quickly, because in 2-3 minutes the first batch will be cooked and the next ones will be sent to the water. Also note that if you leave the dough uncovered for a long time, it starts to dry out and then it is difficult to sculpt, so if you suddenly need to be distracted, it is better to cover your dough tightly with cling film.
I cooked all my dumplings, and now they can be eaten. Serve with sour cream. Also often to such dumplings fry in addition onions with lard, sprinkle it all on top. But I don't really like lard and I cooked it for children, so my dumplings turned out like this.
