Howdy Foodies Bee Hive Family! My partner and I committed to saving more money in 2023, so instead of heading to a fancy restaurant this AM for brunch, I went into the refrigerator and whipped up something special.
We had fresh salmon, avocado, tomatoes, cilantro, parmesan cheese, shallots, bacon, corn tortillas, and lime juice. We opened 2023 with cilantro lime salmon & guacamole tacos. This simple recipe bursts in your mouth because of the yummy lime juice.
Cilantro Lime Salmon Tacos
Servings: 4-8
[Ingredients]
—Tacos—
1-2 medium size pieces of salmon
Pinch of salt
Pinch of pepper
2 tsp of cilantro
1-2 tsp of lime juice
2 pinches of parmesan cheese
4 strips of bacon, torn to pieces
2 tbsp olive oil
4-8 6-inch corn tortillas, warmed or fried
You can’t go wrong with this recipe. You can cook your salmon in the oven, stove top, pressure cooker, or air fryer, to name a few.
Step 1
Preheat the oven to 400 degrees.
Step 2
Sprinkle salt, pepper, lime juice, and cilantro over the salmon—Cook, the salmon for 27 minutes at 400 degrees.
Step 3 - To Assemble Tacos
Add two pinches of parmesan cheese and bacon pieces to the center of the corn tortillas- and then fill with the cooked salmon. Break the salmon into pieces and add your prepared guacamole. Enjoy :)
—Guacamole—
1-2 large avocados, peeled, pitted, and smashed
Pinch or two of salt
Pinch of cayenne pepper
1 tomato
1 shallot, diced
1-2 tsp cilantro, chopped
1/2-1 tsp of lime juice, fresh or bottled
1 tsp garlic, minced (Optional)
Step 1
Peel, remove the pit and mash the avocados.
Step 2
Add lime juice, cilantro, salt, tomato, and shallot and mix in a medium-sized bowl. Stir in cayenne pepper. Enjoy :)
