Today, I'm sharing the recipes for two of Bengalis' favorite dishes: Luchi & Aloo Dom.
In a nutshell, this is every Bengali's favorite dish in both West Bengal and East Bengal. Because I am Bengali, I enjoy this cuisine as well.
So, without further ado, let me show you how to cook these delectable recipes with simple household ingredients.
The following ingredients are required to cook Aloo Dom:
- Potatoes
- Sour yoghurt
- Tomato sauce or raw tomato paste
- Onion paste
- Cumin (Jira) paste
- Ginger paste
- Garlic paste
- Cumin powder
- Turmeric powder
- Coriander powder
- Chili powder
- Pepper powder
- Garam masala powder
- Bay leaves
- Cardamom
- Cloves
- Raw cumin
- Cinnamon
- Salt
- Oil
- Sugar
- Water
- Dry Chili
Cooking procedure for Aloo Dom:
Peel small potatoes first. The peeled potatoes should next be steamed 80% in water with salt. Next, with a fork, cut a small hole in the boiled potatoes so that the spices can penetrate well.
After that, combine the boiled potatoes with the chili powder, turmeric powder, and a pinch of salt and fry them in oil until they turn brown, then remove them from the pan.
Pour extra oil into the potato oil and fry for a few minutes with bay leaves, cardamom, cinnamon, dry Chili, cumin, and cloves.
Now inflict for a bit with onion paste, cumin (Jira) paste, ginger paste, garlic paste and tomato sauce or raw tomato paste (anything you can get your hands on).
Coriander powder, chili powder, turmeric powder, salt to taste, a little cumin powder, and pepper powder should be blended with the spice a little better one by one after that.
Then, pour 2 teaspoons of sour yogurt into the spice mixture and stir well. Add water and re-inflict the spice.
Now add the fried potatoes to the seasonings, toss to combine, pour in the water cover, and simmer for 15 minutes.
Then open the lid, add a pinch of Garam masala, a pinch of cumin powder and half teaspoons sugar, shake it again, cover, and simmer for 7-8 minutes.
Turn off the heat and leave the potato covered for about 10 minutes.
Ingredients for frying luchi:
- Flour
- Hot water
- Nigella
- Sugar
- Salt
Luchi should be fried in the following manner:
Take as much flour as you want to make luchi, mix it with nigella, a little bit sugar, and a pinch of salt, pour hot water in small increments, knead the mixture thoroughly and make dough. After that, use the dough to form the luchi and deep fry it in oil.
So, with the ingredients on hand, Luchi and Aloo dom are prepared to serve.
