Hello there foodie lovers! I have recently have recently harvested two jackfruits in a row right in my backyard gardening. This kind of fruit has a distinct smell that will tell you it's already ripe for harvesting even if you're still few feet away. Jackfruit is one of my favorites you know and since it's more than enough for me, so I opted to set aside and make a preserve out of the remaining flesh.
First you need to remove the seeds for another purpose.
Next, slice or cut it into strips. You only need a one is to one ratio of brown sugar and the jackfruit flesh.
The fruit is already watery in nature, hence there's no need to put water during the process. Simply add the brown sugar and jackfruit strips over low heat. Cover it to let the liquid ooze from the pulp and blend with the brown sugar, enough to form a syrup. You may add a few drops of lemon and vanilla to enhance the flavor.
Stir occasionally to prevent the syrup from getting burned. Syrup is well done when the syrup becomes sticky.
Let is cool first before covering, to let the sweat evaporate.
