I had fresh apples and 30 minutes to spare, so I prepared a simple apple cake. (While the cake was baking in the oven, I did my laundry!)

Then finely dice 2 fresh apples.

Combine the dry ingredients into the wet ingredients in two batches and stir together until almost combined.

Add 2 teaspoons of vanilla.

Add the diced apples.

And mix. The cake batter will feel dense, unlike regular cakes that you can pour.

Scoop the apple cake batter into a prepared pan (greased with butter).

Then bake in a preheated 325 degree F oven for 55- 60 minutes, or or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes, then turn onto a plate, and glaze the cake if preferred.

I prepared a brown sugar glaze of 1/4 cup butter and 1 cup brown sugar which I heated until it turned caramel in color.

We are ready to cut it, and have a taste, while it is warm!
