I planned on gardening, but the weather changed those plans. I had been wanting to make egg rolls again, so that's what I did.
I browned some ground beef with onions, peppers, and shredded carrots first. Then I finely chopped the bok choi that I harvested from the hydroponics. While that was wilting down, I quickly boiled rice noodles until al dente. Once they were cooled off, I cut them into small pieces and added everything together for the filling.
I used two wrappers per egg roll to make them stronger. It didn't take too long before I had finished filling them all.
I only cooked them in oil until lightly browned, as I was prepping these for the freezer, and they would be reheated.
The darkest ones became part of that night's dinner, and the others were packaged for the freezer. I had made enough for three meals, not a bad accomplishment for a rainy morning.
Making a quick stir-fry three days earlier must have put me in the mood for Asian-style meals. Now, I'm feeling Thai Curry coming in the near future. lol
It's still rainy, windy, and cold outside. I will have to find something else to make this morning. Oh my!
