This week has been exhausting with all the canning I have done. The garden is bursting with produce and I am doing my best to keep up with this year's bounty. Preserving all the tomatoes and peppers is a daunting task, yet so much fun at the same time.
I decided to create a Caribbean-style hot sauce from a variety of different recipes online. The one I will share today is the final result. I have to admit, myself and my husband decided it would be one of our favorites.
SUNSCAPES CARIBBEAN HOT SAUCE
3 orange or yellow jalapeno peppers
3 cups. yellow bell peppers
1 cup chopped habaneros with seeds (5-6)
1 cup chopped onion
1 cup chopped, peeled mango
1 cup diced pineapple
3 cloves of garlic chopped
3/4 cup apple cider vinegar
1/4 cup water
1/4 cup lime juice
2 Tbsp. brown sugar
2 Tbsp. coarse sea salt
1 tsp. orange zest
1 tsp. ground ginger
1/2 tsp. allspice
- Add all the ingredients to a pan over medium-high heat.
- Simmer for 10 minutes – until the ingredients are soft.
- Process in a water bath canner for 15 minutes.
I did not take long to chop up all the ingredients for the sauce.
I did end up doing a double batch of this recipe since I had really ripe mangos and pineapple to use up.
Onyly 15 minutes in the water bath canner and the hot sauce was done. Oh yeah!
