Old Amsterdam cheese
Has been my favourite cheese ever since I was a child. When I was little though, we didn't eat it as much as I would have wanted because it was way too expensive for my mother compared to the usual Gouda cheese or other similar stuff. In Holland, the assortment of cheeses in every supermarket is huge compared to living in another European country. If you don't have too much to spend on cheese, you can go for a variety of different aged cheeses that are packed in a vacuum, often quite a bit cheaper than the fresh ones from the counter.
Then you also have the bigger slices of cheese to cut into little cubes and eat with some mustard for example. These can be bought at the counter in most supermarkets as well as pre-packed. The aged cheeses are the most expensive ones and were often out of my mother's budget. I remember that when I slept at my grandparent's house, my grandfather spoiled me with some Old Amsterdam in cubes in the evening as an evening snack.
Cheese Spread
Whenever I create a cheese plate or have some baguette in the evening to eat with a brie or camembert topping, I like to at least one or sometimes two spread as a topping as well. This way we can both choose from several kinds of cheese or other toppings. What I personally love a lot, while my boyfriend really doesn't enjoy a well-matured cheese, is Old Amsterdam spread. In Holland, I bought this ready to eat in the supermarket, while here there simply isn't that much to chose from in the cheese department, so I have to make my own spread. Honestly, this is no big deal as it's fun to do and this way I can add whatever herbs I want, and play around with the ingredients. I will share with you my last recipe, as it turned out nicely.
The Ingredients
- 80 grams of Old Amsterdam Cheese
- Half a teaspoon of mustard
- A teaspoon of Curcuma
- 4 tablespoons of mayonnaise
- Pinch of salt
- Black pepper
- Ground garlic powder
- Fresh chives
For serving:
- French baguette
The Process
Cut the Old Amsterdam into cubes. I cut them even smaller afterwards, as these cubes turned out to be too big. See next images.
Add the mayonnaise, mustard, Curcuma, garlic powder, and salt in a small bowl.
Cut the chives.
Mix the mayonnaise until you have a smooth mixture and now add the pepper to your liking. Taste it to see if you want some more of any of the flavours or in case it's too strong for you, add some mayonnaise.
Add the chives to the mix.
Now add this to the cheese cubes and you have yourself a lovely Old Amsterdam cheese spread!
The End Result
Don't forget to add some freshly baked baguette!
