Purple eggplant is one of the vegetables whose fruit is taken as a side dish. Purple eggplant fruit has a soft texture but contains a little water. Because the texture does not contain much water, the purple eggplant can be fried. Purple eggplant fruit can be processed into delicious dishes, there are several ways to cook purple eggplant, for example fried in flour, boiled and served with sauce shrimp or fish paste, burned and the flesh is taken used as sauce balado.
Today I'm going to cook the 😅😅version of purple eggplant sauce balado, because I added an ingredient that other people don't usually use to cook sauce balado, I added "shrimp or fish paste " to whet my appetite and my family's.
Purple eggplant is one of the fruits that is rich in fiber and few calories, so it is good for supporting diet programs and losing weight, the purple color contained in eggplant skin is rich in anthocyanin which is useful for warding off free radicals, therefore when buying purple eggplant,choose dark purple.
To make balado sauce, you can use green chilies with sliced ​​tomatoes or use red chilies.I prefer to use red chili in making the purple eggplant balado sauce, because the chili flavor is more pronounced.
The ingredients needed to make purple eggplant balado sauce are:
The main ingredient :
1,500 grams of purple eggplant
2.150 mL cooking oil (I used a little cooking oil)
Softened seasoning :
1.100 grams of red chili
2.100 grams of tomatoes
3.5 cloves of onion
4.5 cloves of garlic
Additional Ingredients:
1.1/2 tablespoon salt
2.1/2 teaspoon sugar
3.1 pieces of terasi(shrimp or fish paste)
4.pepper to taste (if not used it's okay)
I don't use artificial flavorings, I add spices and natural spices to add flavor to my cooking.
How to cook:
The first step: Wash the red chilies, tomatoes, onions and garlic.
The second step: Blend red chilies, tomatoes, onions and garlic, until smooth.
The third step: thinly sliced ​​shrimp or fish paste.
The fourth step: Wash the purple eggplant fruit,drain,cut according to taste.
The fifth step: Heat cooking oil
The sixth step: fry the purple eggplant until light brown.
The seventh step: don't forget to turn the other side when frying, fry all the eggplant until it's done.
The eighth step: reduce the cooking oil for sauteing the ground spices.
The ninth step: Saute ground spices until boiling.
The tenth step: add salt, sugar and sliced ​​shrimp or fish paste, mix well.
The step eleven: put the purple eggplant that has been fried into the boiling seasoning.
Thr twelfth step: stir the eggplant so that the spices absorb. Stir so that the spices are evenly absorbed into the eggplant.
The thirteenth step: add pepper powder to taste.
It's time to turn off the stove and serve the purple eggplant balado sauce.
TIPS: The taste of shrimp paste is usually salty, so be careful when adding salt.
