Hi foodies! Thought to share one of the quick & simplest dish I have created - my version of Tuna Pasta Salad. While going through my kitchen cabinet one day hunting for a quick meal, there I saw a pack of pasta, few canned tuna and mushroom and I figured why not make a pasta salad. To prepare the ingredients, most of the ingredients are easily available in grocery stores.
Ingredients:
- Spiral pasta / Fusili (about 500 gsm)
- Canned tuna flakes in olive oil / sunflower oil (2 cans, 150g each) – slightly mash up the tuna in bowl
- Canned button mushroom (1 can, 425g) – cut into slices
- Garlic (about 6 to 8 cloves, reduce or add more as preferred) – minced
- Olive oil / vegetable oil
- Salt
- Cherry tomato & fresh parsley (optional)
Prepare ingredients from 2 to 4 above for cooking.
Recipe for about 400gsm of pasta, can be adjust accordingly based on preferences and servings size.
Method:
Pasta -
Fill a large pot with water bring it to boil over stove.
Add a pinch of salt into the water. This helps flavour the pasta and reduce the cooking time.
Bring the water into a full rolling boil and place pasta into the boiling water.
Let pasta cook for about 8 - 12 mins, drain the water and set aside.
Tuna & Mushroom -
Place saucepan over medium heat and add 1 teaspoon of vegetable oil. Let the oil heat up for a few minutes.
Add chopped garlic stirred frequently until slightly brown in colour.
Toast in mushroom slices stirring with garlic until mushroom are darker brown, season with some salt.
Add in mashed tuna and sauté for additional 6 minutes.
Place cooked tuna & mushroom in a bowl and set aside.
And lastly, mix cooked pasta with tuna & mushroom in a salad bowl and add some cherry tomato and chopped fresh parsley as garnishing if desired.
