Good day all my Foodies on Hive! It is time to try out a new recipe, something that I completely stumbled upon by accident!
On Friday, my son () was texting me and I asked him what we should make for supper. Initially Fish and Chips or Pizza was on the suggestions list. He also told me we have a voucher to buy 2 and get 1 free at our local Butler's Pizza.
I looked at the menu and realized that it would easily cost us around R300 then for the 3 pizzas. I thought to myself - I could buy a lot of meat for R300 and we could just braai... and then I had a thought - would it be possible to make a pizza-type thing out of JUST meat.
I googled it and watched a youtube video and saw that it was indeed possible. I took what they had, added my own spin on it and came up with my very own Meatza! I proceeded to make two of them!
Let's get into it!
Ingredients
You will need ground beef (or mince as we call it here) to make your base. Cheese is a must as well as eggs and some spice.
You can spice these things however you want. In my case I went for the very local - Six Gun Grill.
After that you can do whatever you want!
I went for bacon, mushrooms, spring onion, tomato, onion and garlic.
The Method
Preheat your oven. You will need a pan or skillet that can go into the oven to make your base.
Meanwhile pre-cook your toppings.
Throw some oil in the pan.
Fry up some bacon.
While that bacon is cooking, dice the onion.
Take the bacon out and set it aside. Dont overdo the bacon, it is going back into the oven a second time and if you overdo them, the end result could be hard and too crisped or burnt.
Stick the diced onion into the pan you did the bacon in and let that onion cook in the bacon fat that was rendered out of it.
The onion will take a while. Nobody wants hard pieces of onion on a pizza - crispy onion is for sides and salads!
So now we work on the ground beef.
Note, the other people used parmesan cheese, the cheese store in Table View only had Pecerino Chees which is about the same with a sharper taste.
Spice into the Mince.
You could go for basic salt and pepper here or go nuts and use loads of chili powder if you like it hot! Mine is six gun grill... like a braai!
I then added half the bag of the ground cheese.
Next is the binding agent - eggs. The amount of eggs need to scale up with the amount of ground beef. It was my first time so I needed to experiment. I also saw on the video that the meat base shrunk less if you use enough egg.
You mix all of this together. You need some clean hands and a basin of hot water nearby because the only way to get this done right with the hands. I think mechanical methods would make it into a paste which would not be as good.
Meanwhile my onions were starting to brown.
So I added the garlic flakes to this. These are not the fried out flakes but they are chunkier than crushed garlic.
Meanwhile I shredded the bacon so we can use it as a topping.
Then stuck my onions in this pan.
Without changing the leftover juices I fried up some tomato. This was done at a low to residual heat from the pan, don't over do it!
The reason each ingredient is being done separately is that it controls how much of each topping I would use. I did not want to come out the other end having too much onion or have a section of pizza with zero bacon. This allows me to place each layer on it's own and make things even.
I cut some spring onion greens but did not pre-cook this.
While the tomato was doing its last bit...
I chopped up the mushrooms. I did these in the "steaklet" fashion and not finely.
I took the tomato out and the mushrooms in and added a bit of butter for flavor and colour.
Look at that! So delicious!
There you have it. All my toppings are ready. I do not need to worry about then getting cold as they are going back into the oven soon!
I realized that I had enough ground beef for two meats and split it down the middle, removed one half and rolled out the other.
This then gets cooked in the oven to form a base.
Oops, forgot about the mushrooms!
Right the base is made, added tomato paste.
Then onions/garlic.
Tomato and mushrooms.
Bacon and Spring Onion and topped with cheese. Back into the oven and...
The Result - Mouthwatering!
Just look at that!
