I’m often out of ideas in the kitchen when it comes to cooking. Baking is another story! I love baking, but cooking.... not so much. So I look for healthy quick options that (most) of my family like.
I try to add at least 1 superfood to everything that I make. But in this recipe I’ve added a whole lot of nutrient rich Superfoods making it a super healthy option.
Some of the key SUPERFOODS that I use often are:
Spinach (and other leafy greens)*
Eggs*
Avocado
Berries
Oats
Cinnamon
Ginger
Almonds
Garlic*
Olive oil*
Dark chocolate!!!! Yes!!!!
Today’s recipe includes 4 of these superfoods!!!*
Here is a quick crustless (no grain) quiche that I make every week
INGREDIENTS
3-4 big handfuls of destalked Fresh Spinach (the stalks make it bitter)
2 tspns crushed garlic
1-2 Tbsps olive oil
½ cup feta cheese
1 packets diced bacon bits (about 200g)
½ cup baby tomatoes halved (or large tomato sliced thin for the top)
5-6 eggs
½ cup milk
Salt and pepper to taste
1 cup Shredded cheese (optional)
METHOD
Preheat the oven to 180C, placing the shelf in the middle of the oven.
Wilt the spinach together with the garlic and olive oil in a medium sized pot with the lid on, stirring regularly. The spinach should get bright green and limp within 2-3 minutes and it takes in the garlic flavour.
Spread the spinach into a greased casserole dish and allow to cool while you prepare the rest of the ingredients.
Sprinkle the bacon bits over the spinach evenly.
In a bowl, whisk the eggs and milk together adding salt and pepper to the mix.
Pour the egg mixture over the spinach and bacon.
Crumble the feta into large chunks and sprinkle over the egg mixture in the dish.
Chop the baby tomatoes in half and lay them face up
On top of the mixture.
Now you can add the shredded cheese over the top or leave it out. I often leave it out, but it does give the quiche a beautiful golden cheesy crust if it’s add it. (Some pics have cheese and other don’t)
Carefully place the dish in the oven and bake for 30 minutes. Check from 25 minutes as times may vary depending your oven.
The quiche will settle and cool, but can be eaten immediately or stored in the fridge for the next day.

You could substitute and adapt this recipe with whichever vegetables you like, just remember to steam them beforehand.
This is definitely one of our go-to meals that work for breakfast, lunch or dinner with a breakfast roll or salad.
