Today I give you this delicious and different recipe to eat for lunch or in a Brunch with your friends on a Sunday afternoon. It is very practical to prepare and best of all TASTY! 😋
Ingredients:
- 2 chicken breasts (if possible, free-range).
- 4 tablespoons of pesto.
- 75g fresh mozzarella
- 4 tablespoons grated Parmesan cheese.
- 4 tablespoons sun-dried tomatoes in olive oil.
- 2 tablespoons of olive oil.
- Salt and pepper.
Others:
Kitchen twine.
Preparation:
Step 1: Clean the breasts and make a vertical cut, opening them in half up to 1-2 cm from the edge.Then, add salt and pepper to taste to the breasts, and add 2 tablespoons of sun-dried tomatoes with their olive oil to each breast.
Step 2: Add two tablespoons of pesto.
Step 3: Then add 2 tablespoons of Parmesan cheese.
Step 4: Add the mozzarella cheese.
Step 6: Season the outside of the breast with salt and pepper and close it with the kitchen string.
Step 7: Heat the oil in a non-stick frying pan over medium heat. Cook the chicken for about 8 minutes on each side, or until golden brown. Cover and continue cooking for another 8 minutes or so. (It will depend on the size of the breasts and the type of chicken; free-range chicken usually takes a little longer).
My Final Recommendations:
This recipe can be served with a tomato and avocado salad.
You can substitute the kitchen string for wooden sticks.
It can be served chopped in medium pieces to share at a brunch.
Before chopping, let it cool a little to avoid spilling too much of the filling.
A slice of bacon can be added to the filling.
