Yesterday we came down from the mountainous Libano, 1525 meters above sea level, and are enjoying the lowlands of middle Tolima, a familiar piece of land that has been in the family of our co-cuñado for many years, sitting at 327 meters above sea level.
The fruits of the star fruit tree, called carambolo called out to.us to be harvested.
Someone said to us that the tree had so much fruit that we must rescue it from its own weight. First all we could reach by hand, then with a stool and finally with a ladder, being as careful as possible to not let them fall, as they are quite watery and damage easily.
With my neice and sister in law we harvested a lot!
The name carambolo means 'mixed up', and this is the way to eat starfruit, mixed with other fruits in juice or other recipe. The watery goodness of starfruit provides a perfect backdrop for pineapple or strawberry juice, among many other glorious mixes possible.
Of course its famous form is also a pleasant star, and can be enjoyed as is, though the flavor is very subtle it delivers great vitamins and a thirst relief rivalling any other fruit I have known. In order to maximize the visual, it can be cut open laterally.
May this Christmas star give all who are looking at it tremendous calm and serenity, blessings of happiness and tranquility, freedom from fear and doubt in this new year 2021. The stars and symbols of prosperity are all around us, may we remember them and look at them, and by their contemplation dream with them for a better world, a better life and a richer level of experience in the here and now.
