There are innumerable made from noodle specialties along the S-shape of my nation, such as Pho in the north, Spicy Hue Vermicelli Soup, Mi Quang, and noodle soup in the south... Today, by coincidence, I read topic of Week 2 cooking on a budget competition using ingredients produced from pho noodles . I have duck accessible in the refrigerator, so I'll prepare duck bamboo shoot noodles.
Materials include:
- Duck meat: 200gr
- Fresh bamboo shoots: 2 sticks
- Noodles: 800gr
- Vegetables served: lettuce, lettuce, perilla, bean sprouts..
- Ginger: 2 piece
- Lemongrass: 3 plants
- Garlic, chili
- Regular seasoning
Step 1: We'll get the ingredients ready:

Step 2: Make the broth
First, soften the bamboo shoots in a heated oil pan for about 2 minutes, then season with a little salt and sugar to infuse the bamboo shoots.
The next step is to heat 5ml of cooking oil in a pot, then add the duck flesh until it is cooked through, then add roughly 1 liter of stock, add the lemongrass that has been stamped in 30 minutes until the meat is tender, add the cooked bamboo shoots before .Season to taste before turning off the heat.
Step 3: Make the dipping sauce
I don't know since when, but when I know how to cook, when I cook duck meat, it will come with an indispensable spice that is ginger. So we'll use ginger fish sauce in this meal.
The following is a simple method: Pound a few garlic cloves, chili, the rest of the ginger, and 1 tablespoon of sugar in a mortar. Then, in a cup, combine 1 tablespoon fish sauce and 1 teaspoon lemon juice, stirring well.

Place the vermicelli in a bowl, then add the duck meat, broth, and bamboo shoots. Top with scallions and coriander. You can eat the duck bamboo shoot vermicelli with raw vegetables and ginger sauce.
