Today I want to share with you a very easy and delicious recipe, “Coconut Cookies”.
These cookies are made based on one of my favorite fruits, coconut, a food with extraordinary antioxidant properties, in addition, it has the ability to regulate blood pressure and lower triglycerides. This fruit is rich in fibers and minerals (potassium, phosphorus, magnesium, iron and vitamins E, C, and B).
To make these delicious and easy cookies you will need:
• 1 cup of wheat flour.
• 1 cup of grated coconut, it can be fresh or dehydrated.
• 1/4 cup of flaxseed water, replacing the egg.
• 1/4 cup of oil of your choice.
• 1/4 cup of sugar.
• One teaspoon of baking soda.
• A pinch of salt.
preparation:
First in a bowl, mix the wheat flour, oil, linseed water, sugar, bicarbonate and salt with the help of your hands, knead very well until you form a smooth and homogeneous dough.
Then add the grated coconut to the dough, knead until integrated.
With your hands, form a long roll with your dough and put it in the fridge for 30 minutes.
After that time, remove from the fridge and cut your cookies 1 cm wide.
Then you place them on a greased tray and take them to the oven for 20 minutes at 180C.
