Wishing that everybody is healthy and happy. I'm here again to submit my entry for the medical cooking competition.
I missed the first category but I was able to join the two and the third and the final one which is this entry. At first, I was thinking twice if I would resume this because I was uncomfortable with the other participant's unbelievable talents but anyway it's not just about prizes but also the things that I could contribute to the community.
For my simple recipe today since I'm done with seaweed and vegetables now it will be all fruits. I call it a fresh fruits salad. I wouldn't have to make a complicated name since obviously, it's all fruit but it would be more delicious because we're adding yoghurt.
How did I come up with this idea?
Two years ago I was once a service crew at one of the well-known food cart companies in Cebu, Philippines but the company I've worked for was just franchised the company name and foods was all about healthy shakes, juices, sandwiches and salads so my recipe today was a kind of old job inspired. I choose this recipe also so it's easier for me to prepare and not to worry about the outcome.
The ingredients
- 2 freshly picked young coconut
- 1 Mango
- 1 Banana
- 1 Apple
- 125 grams seedless grapes
- 1/4 cup corn kernels
- 1 pack watermelon
- yoghurt (strawberry flavour)
Preparation
we always have to consider safe food preparation.
- First is to wash hands properly
- wash all fruits before cutting
Procedure
First step I made was to work on the fresh coconut, separate the water and shred the meat.
Second, I peel the mango, banana and also the Apple because I don't want to eat the skin with wax. I don't worry about the corn since I bought a whole freshly cooked sweet corn and I only use 1/4 cup and let the kids eat the rest. I also bought a new pack of watermelon since I don't want to buy a whole because I don't have a fridge to place.
Third, is to slice mango, watermelon and apple into cube bites and slice the banana and grapes into halves.
I separate some parts of the coconut meat and extra mango from the seeds to blend with the yoghurt. This serves as a nutritional cream that adds taste to our fruit.
- The last step is to combine the mixture with the fruits (in our case we add ice since we don't have a fridge) and enjoy!
What makes it healthy?
For me it's simply healthy because eating fruits is a key to healthy eating. Fruits contain many nutrients that our body needs it also reduces the risk of several chronic diseases and can help us lose weight.
My salads fruit benefits
Coconut - Energy booster because of its high protein content. Coconut milk is also high in potassium which regulates electrolytes in the body which prevent dehydration.
Mango - high in iron, effective in relieving clogged pores skin, an excellent source of vitamin A and C it also treats acidity and poor digestion.
Banana - an energy booster and rich source of iron and potassium and soothes diarrhoea by replacing electrolytes that maintain fluid balance.
Apple - contain pectin, which controls insulin levels and lowers cholesterol, reducing skin disease. studies show that 100 g of apple is equivalent to about 1500 mg of the vitamin.
Watermelon - 92% water, 6% sugar 2% other minerals. Excellent source of vitamin C and potassium and contains a large amount of beta carotene.
Grapes - contains flavonoids that are very powerful antioxidants, rich in folate and treat, indigestion, fatigue, kidney disorder, macular degeneration and prevent cataracts.
Sweet corn - can lower cholesterol and help in kidney problems and renal dysfunction.
