I always fell in love with my mother's mashed Irish potatoes and vegetable sauce. She makes her vegetable sauce with carrots,green beans, white onion, green peas and she also makes scrambled eggs which she keeps as a side dish.
My mother loves to eat healthy and I have emulated her as a grown woman.
The way she makes this delicious vegetable sauce, you will certainly bite your fingers while eating. I always enjoyed how she mashed the Irish potatoes. The mashed Irish potatoes always brought this nostalgic aroma that my taste buds never resisted.
As an adult, I have not stopped loving this meal. I find myself still making this meal which I eat in happiness. Sometimes,I run home to my mother just because I want to have a taste of this meal. I realize that no matter how much i try to recreate this meal, i can never make it as good as my mother does. To think that she doesn't use any special ingredient makes me wonder why mine doesn't taste as good as hers. Or maybe the difference is in her hands. Her magical hands I guess .
Here is how to make the meal
Ingredients
- Irish potatoes
- Fresh carrots
- Fresh green beans
- White onion
- green peas
- Fresh tomatoes
- Eggs
- Fresh pepper
- Onion
- Salt
- Seasoning cubes
- Olive oil
Directions
Peel wash and boil the Irish potatoes until soft
Dice the carrots,green beans and onions
In a frying pan, add the olive oil and leave to be hot for 2minutes
Add the sliced white onions and stir for 2 minutes
Add the green beans and stir.
Leave to cook for 2minutesAdd the carrots and green peas and stir everything for one minute.
my mum doesn't like the carrots to cook because she feels it will take away its nutrients when cooked .
• Add salt to taste.
Your vegetable sauce is ready
For the scrambled eggs
Whisk your eggs
In a frying pan, add your olive oil
Allow to hot for 2 minutes
Add your sliced onion. Allow to fry for 2 minutes
Add your fresh tomatoes and fresh pepper and fry for two minutes
Add your eggs. While doing this, spread round the pan.
Stir after three minutes and add a little salt.
Scrambled eggs is ready.
You can either mash the potatoes or leave it. But I love mine mashed always.
