There are so many dishes that I have so much loved and enjoyed in the past to the extent of declaring them to be my Favourite Food (at least, at that time of my life haha 😂).
Let me give you a brief explanation of what I meant up there ☝.
🔸In my very early years, my favourite food was sliced bread, fried eggs and hot chocolate drink. I would not mind getting it five times a day, but y'all know how moms are... they always know what is good for you 😊
🔸As a teenager, I loved Jollof rice with fried plantain. It did not matter whether there was any piece of protein to go with it or not. I loved it that much, and would have loved to have it every day, but... should I say it has to do with my mom again? 😂😂😂
🔸As a young graduate, I fell in love with Quaker oats, fried eggs and plantains. I can't believe I eventually got tired of it. At least, it was my favourite at that time of my life.
🔸As a young married woman, I found myself drawn to Nigerian fufu and Edikaikong soup. The fufu is the type pounded by the Igbo people not to type that the Yoruba people stir with their 'turning stick'. The Edikaikong soup is the Efik kind, made with ugu leaves and water leaves. If I add periwinkles, the shells must be removed before I use them to cook.
Nineteen years in marriage, the story is completely different 😂. I am more conscious of the relationship between my health and the things I eat.
My Current Favourite Food is Flaxmeal pancakes taken with bulletproof cocoa or bulletproof coffee.
Making it is so easy. I get the flax meal by grinding the flax seeds in a blender mill.
Ingredients
🔸flax meal (3tablespoons)
🔸sea salt (a pinch)
🔸truvia (1 sachet)
🔸ground cinnamon (a pinch)
🔸baking powder (1/4 teaspoon)
🔸fresh eggs (3 large )
🔸coconut milk (3 tablespoons)
🔸butter ghee (for frying)
Procedure
🔅In one bowl, mix the dry ingredients together.
🔅In another bowl, whisk the eggs and coconut milk until foamy.
🔅Pour the egg mixture into the bowl of dry ingredients and whisk until well combined, and without lumps.
🔅Grease a frying pan with butter ghee and put on the heat.
🔅Scoop the batter unto the heated frying pan, wait a few minutes before flipping to fry the other side.
🔅Repeat until the batter has been exhausted.
🔅Serve hot with your bulletproof coffee.
There are so many versions of bulletproof coffee. I make mine by adding butter or butter ghee, coconut oil, coconut milk or almond milk, a sachet of truvia, a pinch of ground cinnamon. Blend together, or use a frother.
For now, that is it about my favourite food. If it changes in the future, I will consider updating you about it. After all, tastes change over time. Yes, or yes?
