Monday morning started simple but satisfying. Today, I had a bowl of delicious "Pancit Bato", famous noodles here in Bicol for breakfast while sitting beside my laptop as I prepared for the paper works for the day. The warm pancit mixed with vegetables like carrots and cabbage made the meal even more enjoyable! It may be a simple dish, but it always reminds me of home and comfort. It gave me the energy and motivation to begin the day with a positive mood.🥰🍜
