This was post was supposed to be published before now but I kept postponing it. I noticed that I became a little bit lazy about publishing posts but now I've gotten over it, lol. 😂 Finally I decided to share it today,
Tuesdays are for Talents and Taco contents and this one is a combination of both, a special delicacy, called Ekurueku Mmiri Ọka which in English means Fresh Corn Peppersoup. 😂, Sounds interesting, right.?
Let me tell you a little bit about this food.
Ekureku mmiri ọka is one of my native foods, It is not really a popular food, which everyone knows. I won't be surprised if some people say that they are hearing about it for the second time.
The main ingredient in this food is corn or maize like some people call it, and it's not just any type of corn, but the white one, gotten fresh from the farm. This particular type is used because of its sweetness and natural nutrients. Again it cooks faster than the other ones.
This food is nutritious and healthy as it contains the essentials nutrients which are useful for the body. It is a balanced meal, and can serve as breakfast, lunch or dinner. Having this meal on a cold weather will help keep your body get warm.
The harvest season, when fresh corns are available is usually the time it's prepared but if you can lay your hands on fresh corn now, I urge you to prepare so you can have the feel of its taste.
To prepare this ekureku mmiri ọka, we would be needing
- Fresh corn - the white one
Fish - you can also use either smoked, or any type of dry fish. Feel free to add any protein of choice.
Salt to taste
Any choice of seasoning cube
Crayfish
Onion
Pepper (I used dry type already grounded)
Scent leaf and a little ugu (pumpkin) vegetable
Palm oil
- And of course, water
Let's start with the cooking
- Wash the corns very well, and set on fire to pre-cook for 10 minutes.
While being cooked, start getting the other ingredients ready.
Once they are cooked, set the pot down and allow to cool down. Once cool, it's time to remove the corn from the cob.
After you are done, sieve the water used in precooking the corn because you will still use it to complete the cooking.
Next add some quantity of the sieved water to the corn, set on fire for the final cooking.
Add the fish, onion and the other ingredients except the vegetable and palm oil. Allow to cook for another 20 minutes or until you notice that the corn is well cooked.
Add the palm oil and allow to cook for about five minutes, next to go in is the vegetable. Cover and allow to simmer for two minutes, then bring the pot down.
Your ekureku ọka mmiri is ready to be enjoyed. Hmmm so yummy.
This is another great way to enjoy you corn aside from roasting, cooking with the cob, or with beans too. Hopefully I will publish about preparing corn with beans someday.
