My daughter and I have gone crazy about these chocolate chip muffins. So easy to make and quick. Preparation takes about 15 minutes and they bake in the oven for 20 mins.
We usually have them hot out the oven - not sure how good this is for you but oh so worth the deliciousness (is that a word?)
Icing is an option - but a very nice one
I like to use paper cups as well although this is not necessary
Directions:
Preheat the oven to 200 degrees C. Grease a 12-cup muffin tin
Combine two thirds of a cup of milk, a Tablespoon of olive oil, Tablespoon of butter and an egg in a small bowl. Blend well. Combine 2 cups of flour, 1/2 cup sugar, 2 level tsp baking powder, and a pinch of salt together in a large bowl. Make a well in the center and pour the wet mixture into the dry ingredients and stir until batter is just combined; fold in chocolate chips. These can be dark chocolate, milk chocolate or even white chocolate balls.
Spoon batter into the prepared muffin pan.
Bake in the preheated oven until tops about 20 to 25 minutes. Cool in the tin briefly, then transfer to a wire rack. Serve warm or cool completely.
Ice with Nutella or a chocolate spread.
Bakes nicely in a glass pyrex dish as well
