Last week, I told you I admire the proceeds every gardener gets from their gardens, especially if the proceeds are vegetables. I always have this amazing feeling in my tummy when I watch some of these vegetables get combined into edible foods and delicacies.
Let me give you a rundown of my favorite garden proceeds that makes a lot of difference among the various food we consume in my country.
The image above needs no introduction as everyone is familiar with the Salads. We have the cabbage, carrots, and cucumbers going into this mix.
In my house, we love the taste of the salad especially when there are cream toppings. My sister would devour every vegetable on the plate without blinking an eye.
I do not know what people use Spinach for but I do know that most folks who do not have access to Afang leave usually use spinach as a replacement to prepare our famous Afang soup.
I am not a die-hard fan of Onions when thoroughly cooked but I love it fresh in certain foods like Noodles, Beans, Ripe plantain porridge, etc.
Yes, I love eating them raw too, although, it always leaves a sort of odor in people's tongues. I am most likely to have my tongue brushed after consuming fresh onions.
People say they eat Irish potatoes the way we eat other ones. I haven't tried it anyway. The only thing I have tasted and gotten addicted to is our Nigerian Meat Pie. The ingredients have Irish potatoes in them and of course lots of meat. I would buy as much meat pie as I can afford, and consume everything without sharing it with anyone....lol. Therefore, anytime I set my eyes on Irish Potatoes, the first thing I think about is a meat pie, and the memories of the crunchy taste always come around with no permission.
Every household uses Fresh Tomatoes, it's the most important ingredients you'll need to prepare Stew and Egg sauce for our Rice, Yam, and plantains. And you'll always see them spread around in large quantities whenever you hit the market.
Special care is given because it's not just a vegetable but a fruit too. A lot of people eat them raw, and a million more use them in cooking almost every week.
I wouldn't talk about every other vegetable without mentioning Pepper and Tatashe (red bell peppers). These two vegetables give flavor and color to our stew respectively.
If you are in a Yoruba Land, you'll always have food prepared with lots of pepper. Therefore, this tribe is known widely to be lovers of pepper. You'll always find them preparing the hottest stew.
