August and September are the busiest months for preserving all the garden produce. Every morning you will find me in the kitchen preparing what needs to be either canned or frozen. Sometimes, I will even be dehydrating, it all depends on how much space I have.
This year's tomatoes were outstanding and I still have a counter full of green tomatoes that I had to pick off the vines this weekend. Once they ripen, I will dehydrate them to make sun-dried tomatoes in basil and oil.
I canned pizza sauce, marinara sauce, diced tomatoes, and BBQ sauce for the pantry shelf. When I am finished canning for the season I will share how much I processed this year.
The hot peppers were prolific, especially the jalapeno and habaneros.
There were so many that I had to make a double batch of Habanero jelly. It is wonderful on crackers with cream cheese, sweet and spicy with just the right amount of heat.
The Jalapeno pepper plants kept giving, so much so, that I made "Cowboy Candy" or Jalapeno Jam as many refer it to. I love to use it when I air-fry chicken or pork. It gives it a nice flavor without too much heat, my husband requested that I make some since he always enjoys it.
Our local farmstand still had peaches and before the season ended, I purchased a large basket to make another round of Firey Peach Salsa. It is a family favorite, of course, but there is never enough on the shelf to keep everyone happy. ;-)
There were enough peaches left over so I made a simple syrup to water-bath can them. I will probably use them to make peach cobbler this fall.
Last, but not the least, I had to do another round of corn salsa for the grandkids. Whenever they come to visit they always ask for it for their snack.
I still have veggies in the garden and this next week will be busy once again. Fall is upon us now and most of the plants have been removed. I did plant some beets, chard, spinach, and turnips for a fall harvest. This week I plan on starting a tray of lettuce to grow hydroponically in the greenhouse. It will do nicely now that the days are cooler.
