Many greetings and blessings from the Promised Land.
I hope you are having a fructiferous garden wherever you are.
Winter is coming slowly in the mountains and one more year we embrase it with gratefulness and beauty.
Like Mother Nature, we hibernate in these cold months to come, trying to keep us warm with the stove in the house, preserving veggies from the garden, baking cakes, cookies and reflecting.
Before the frost came we harvested the last peppers and tomatoes.
Today I present you a simple preservation method for peppers, carrots, coliflower and green tomatoes, following the recipe from my neighbour, Bulgarian style.
We light up the stove in the morning, take the seeds from the red peppers for the next season and start roasting the peppers on top of the metal plate.
After 15-20 minutes, depending on the fire, the peppers are ready to peel, specially the black areas.
In the mean time, I clean the coliflower, carrots and place them inside the jars.
Previously, I boiled some jars for sterilizing.
Once the jars and the peppers are ready, I added in every jar a bit of parsley, garlic and placed the whole pepper or different veggies in the jar upright untill is full.
In every jar, I also added one small spoon of salt, one small spoon of sugar, one big spoon of vinegar and one small spoon of oil.
With the seasoning ready, I added boil water in every jar, leaving a bit space on top, close them with the lid and cook the jars baΓ±o maria for about 30 minutes.
After this time, I placed the jars on a table and cover them with a cloth until cool down.
When the jars cool down, I just go one by one checking the lid, making sure is not popping then I know the jars are close good with pressure and I place them in the basement for the winter.
There are so many ways to do preservations, many different tecniques and procedures.
This time, I wanted to try this recipe from my neighbour, see how it is going and I felt surprise with its simplicity.
On the other hand, encouraged me to try new ways and experiment with spices and flavours, once I understand the principles.
