Today, I would like to tell you about our usual breakfast.
Pancake aroma in the morning can wake up the lady sleeping beauty out from her bed.
I honestly love preparing a simple breakfast to start the momentum rolling.
So our go-to morning meal is none other than pancake!
One early morning, it's pancake time again!
I excitedly served it on the table until I saw the not-so-excited face of my eldest daughter. The facial expression tells me, Oh mom, it's pancake again?
After that day, guess what? I prepared pancake again, but at this time, it's with a twist.
I dived into my fridge and looked for any leftover food in the fridge.
Perfect! I got some small sweet bananas, some Oreo cookies and rainbow sprinkles from my brownie ingredients.
So I blended these ingredients into my pancake batter.
It looks delicious! It became appetizing, especially in the eyes of a child who has a sweet tooth.
So here's how I did it.
1 I got Maya pancake mix (popular pancake brand in the Philippines) and made a batter out of it (I mixed it with egg and oil, plus water).
2 Next, I smashed the sweet banana and mixed it with the batter. It would surely make it sweeter and can add a moist texture to the pancake.
3 Then, Oreo cookies. I crushed it into the batter and mixed it.
4 Then I put the rainbow sprinkles for the final touch. The classic color became very attractive even to my eyes.
5 Lastly, I prepared the pan with butter. I flipped it 1 minute per side.
Voila! Here you go.
I got so happy with the final touch. The classic pancake became colorful and hard to resist.
I took my first bite to see if my little experiment was successful!
Oh yeah, one bite followed by another.
Until I couldn't stop myself from eating the whole pancake.
And yeah! I created a family favorite.
We called it a rainbow pancake. Oh so yummy!
