My dear hivers, I hope you had a nice day and are in good health as well. For my entry about coconut recipes, these are taught by our grandparents. We are coconut farmers, and our daily lives are mostly focused on the farm, and this is our main source of living, it is a big help to our family needs.
I share it with you about my simple, delicious and easy recipe of coconut, since coconut is one of the versatile ingredients used in many delicious and nutritious recipes.
Coconut Filled Empanada with Fresh Buko Juice
How to make Bukayo:
Ingredients:
2 cups of shredded young coconut
1 cup of brown sugar
1 cup coconut water
Procedure:
- heat your pan in low heat together with the shredded coconut.
- next pour the coconut water.
- add one cup of sugar.
- stir continuously until the sugar starts dissolving and caramelizing.
- Leave for a few minutes until it thickens.
- after it thickens, transfer it to any plate of your choice for it to cool.
How to make the dough
Ingredients:
½ kilo all-purpose flour
A small amount of yeast
1 cup of water
Sugar
Procedure:
- Combine yeast and sugar in a glass of water.
- Knead using your hands until it gets mixed thoroughly.
- Let it rest in a bowl with a plate or cloth for cover to ferment it effectively so that the dough can expand.
- Wait for 30 minutes.
- Apply a small amount of flour in your hands to avoid the flour sticking.
- Knead the dough and divide it into small amounts.
With your divided dough, form a circle shaped dough - Using a spoon, get a spoonful of your bukayo and put it in the middle of your circle shaped dough and close it.
- Repeat this until all the dough is filled with bukayo.
- In a pan add a good amount of oil enough for deep frying .
- Once it is hot add your dough.
- Wait until it turns golden brown then flip it.
- After the other side is golden brown serve it on a plate then sprinkle it with sugar.
How to make Buko Juice
Ingredients:
coconut water
coconut meat
Procedure:
- Prepare a glass and pour a buko juice.
- Add the shredded young coconut to a glass of water.
- Serve the pure and fresh buko juice.
As a coconut farmer this kind of food and drink is not only for snacks, but we also consider this as a main dish with pure and fresh buko juice from the farm. We always prepare this food daily or on any occasion.
