Northern Bites: A Love Story in Longganisa ๐ซ
With a huge craving for longganisa for quite some time now, I decided to find sellers online. I was in luck when my husband found a seller and bought the longganisa for me. How lucky am I ๐คญ He bought me two packs of Vigan and Alaminos โค๏ธ
๐ง Vigan Longganisa
The taste of Vigan Longganisa is very aromatic with a hint of garlic as well as a hint of vinegar. Its sharpness has just the right amount of funk, bold like your grandma's scolding, but is somehow comforting too. The kind of sausage that is so crispy on the outer layer while being juicy on the inner layer that you want to forget about your diet and start eating with your hands.
๐ Alaminos Longganisa
Alaminos Longganisa is gently sweet, subtly salty, and always a little bit playful. Has a bit of lightness compared to Alaminos which has less vinegar and more balance. It sizzles in a calm way, not shouting but rather singing in a very soft way, and its scent is similar to the scent of mornings in the region when rice is being cooked.
The Story They Tell Together -`โกยด-
Vigan and Alaminos are not rivals for they flow hand in hand. The other is the sun, soothing and warm. Once they find ground on the same dish โ garlic rice in between them, an egg crowning the spectacle โ it ceases to be breakfast. Instead, it transforms into a love letter to Filipino cuisine โงห เผ โ๏ฝกโกห
