Hello my dear hivers! Greetings to all community π..I wanna share to you one of the delicious food I've prepared for my family today..Why I choose eggplant for this morning as our breakfast because it contains nutrients that's good for the body.
Eggplant can be cooked in different ways but me, I loved it when added with eggs.
Hereβs a tasty and simple recipe for my eggplant omelette ππ₯.
Here are the ingredients:
2 medium size eggplants
2 large eggs
1 small onion, finely chopped
Salt and pepper to taste
Cooking oil
Here are the cooking procedures
- Wash thoroughly the eggplant and place it in a pan.Add some water on the pan. Over a medium heat boil the eggplant.Wait until the skin becomes soft. You can also grill or roast the eggplant.
2.When it boils peeled off the skin of the eggplant carefully.Keep it intact while you're peeling it.By using a fork flatten it slowly.
- Start making the egg mixture,you can add spices into it like onion, tomato and garlic..But I prefer it only as an egg mixture.
4.Beat the eggs and placed it in a bowl.Mix it thoughly.Seasoned it with salt and pepper.
5.Start dipping the flattened eggplant in the egg mixture, slowly cost it evenly.
6.Start heating and oil in a pan, start frying the eggplant dipped in an egg mixture.Fry it until it's color become Golden. Flip each side by side.
if done frying you can pair it with some rice.
For some tips to be so much tasty :You can also have an options to put ground meat or cheese to the egg mixture to become flavorful .
