Day 5 - Homemade Guacamole
After a few days of constant headaches, I had to pause my online activities as I felt it would not part with me anytime soon. Hate when that happens but it is what it is. So my weekly posting badge and with that the monthly author challenge have both failed and I will have to restart again. Thankfully, I collected some content to write ahead in the next days as I'd like to get back into the daily blog routine again.
This picture of the day comes with a little backstory. The food processor I used for this, was in our kitchen cabinet for at least 3 months, if not more. I wanted to have it to try and make falafel at the time and knew I'd find much more use for the processor once I started using it. At the time, I did one trial to make falafel and then never touched the processor again. Not even to cut parsley, onions etc. I always do it by hand. What the heck was I thinking?
Last week, I noticed we'd end up with too much avocado to eat on avocado toast as I noticed not everyone was enthusiastic eating that for a few days, lol. Therefore I figured it was the right time to finally try and make a guacamole myself. I never tried it but I read it's so simple that anyone can do it. I didn't have lime juice though, so I used lemon juice instead, hoping for the best.
I decided to try and cut parsley only first and I was amazed that I've been doing this by hand for this many months while this machine does it much better in just 30 seconds maybe. Djeez, but better to find out late than never, lol. After that, I tried onion, I'm never able to cut them this tiny by hand, so again, food processor for the win! I felt quite stupid ignoring this thing for months but at least I saw a whole world of possibilities now.
Time to get the guacamole done, it was a first test because I had no clue what the best proportions would be and hoped it would turn out great. I had red onion, fresh garlic, fresh parsley, some lemon juice, salt and pepper and avocado for this first attempt. I have to say I was afraid that I'd added to much garlic by using 2 cloves, but it tasted great!
I just put it in the processor all together and mixed it, and I don't think it took more than a minute before it was a nice and smooth spread. We only had chips to test it and when I did, I was amazed how good it was and fur sure I'm never going to buy guacamole in the store, damn, it was so good that my boyfriend came out of the office to find out what the fuzz was about, lol. He agreed, SO good!
Not bad for a first try! Time to find the perfect recipe..
