Just a quick one to say Merry Christmas to those that are celebrating today.
It’s mid-morning here in Brisbane, Australia, and after a rather nasty storm last night (ahhh, the joys of the sub-tropics), the morning has dawned hot and devilishly humid… yuck. The pool is full of debris from the storm, so it looks like this stressed mama will be adding “pool service” to her job list this morning 🙄
A piece of tree has managed to lodge itself in the creepy crawly. Of course it has.
We started the day with a lovely sleep-in, followed by Miss 11 deciding to break the ceramic sugar holder while making tea. That was a joyful mess to kick things off 😂
Then came some VERY enthusiastic present opening, phone calls to grandparents, and then… food. Breakfast.
In true Australian style, the day starts with oysters, prawns, and champagne. Very healthy, in my opinion. Nice and simple — nothing fancy or difficult.
Now onto lunch prep. We’re having:
- Turkey with a delicious apple and pork stuffing with pancetta, walnuts, and fresh garden herbs
- Garden herb butter stuffed under the skin and lemons from the garden around the tray
- Roast lamb sitting on a huge bed of rosemary from the garden
- Roast potatoes (red and white)
- Sweet potato (roasted, then topped with goat’s cheese, walnuts, and balsamic and baked again — SO good)
- Cauliflower cheese
- Roast zucchini
- Boiled broccoli and peas
- Homemade gravy that took three hours last night
- And, of course, cranberry sauce
I didn’t take a photo of the uncooked turkey… lol.
Dessert will be whatever we feel like — thinking pavlova with berries and cream (very Aussie / Kiwi), plus Christmas pudding with custard and cream.
I’m not quite sure what time this post will go live — whether before or after lunch — we’ll see how we go. I’m writing this at 10:50am, waiting to put the lamb in, while the kids are currently playing the drums… 😂
After lunch, I expect we’ll head into the pool… if I can get the debris out by then. The skies are blue at the moment, but the forecast says storms. As always with Queensland weather, it’s hit and miss — blue skies here, next suburb under hail and rain.
