This time I made a simple salad dish from Birds Nest Fern young leaves combined with several ingredients such as Bok Choy baby leaves, Red Quinoa, and Couscous.

| • Bok Choy Baby leaves sprouts |
| • Fried Shiitake Mushrooms |
| • Red Quinoa |
| • Couscous |
| • ½ apple sliced ​​thin (don't peel) and soaked in salt water |
| • Salad oil (I use instant salad oil, if not available, a combination of lime juice, soy sauce, sugar, salt, pepper, olive oil can be used.) |
Directions
Steam red quinoa and couscous together with high water from the surface of 1/2 finger knuckle. Once cooked, let it cool for a while.
Boil the Birds Nest Fern baby leaves until cooked. Remove and let cool.
Mix all the ingredients (fried Shiitake mushrooms, baby leaves Bok Choy, Couscous, red Quinoa, Birds Nest Fern Baby leaves) add the salad oil.
Before serving, it is better if stored in the refrigerator.
Served with mashed sweet potato can also be the right choice. Soft sweet potato which is rich in fiber with fresh fern salad.
