Hello everyone, hope you're all having a wonderful day. My day just started but i want to share a recipe that i did last night. Today i will be making pizza later on and i wanted some cheese so i made vegan cheese. This one is made of cachew chestnuts and it's pretty easy to prepare. It’s also a healthy option and perfect for vegans or lactose intolerants. My roommate happens to be one of these lactose intolerant people so i also made this for him, cause i want him to have a nice pizza, and this cheese is not only healthy but also pretty delicious.
Today it happens to be my birthday as well. I have nothing planned to be honest, so it’s most likely going to be a pretty boring day. Fortunately i will spend lot of time in the kitchen probably, cause that’s what i love the most. Who knows, maybe i will come up with something great today. In the meantime i want to show you all what i did, this cachew chestnuts cheese that you will love. I love to use it as a substitute for mozzarella cause it has that same texture.
These are the ingredients that i used to make my cachew chestnuts cheese.
Cachew chestnuts (¼ cup)
Cornstarch (1 tablespoon)
Salt (1 teaspoon)
Lemon’s juice (¼)
Water (1 cup of hot water)
And this is how i prepared it:
The first thing i did was to put the cachew chestnuts on a bowl, and then i would add the cornstarch, the salt and the lemon’s juice.
Next we’re gonna put our ingredients in the blender and then add the hot water, Blend for at least 3 minutes. Make sure that it’s homogenous.
Next we’re gonna add some olive oil on a pot at medium heat. Then add the mixture and shake nonstop until it becomes creamy, that’s when you should stop.
Find a container whose shape you would like your cheese to have and put it in the fridge for at least a couple hours. You will be amazed on how good this cheese tastes.
Once the two hours have passed this is the result. Look at this beautiful cheese. I had it with bread and absolutely loved it. This is by far my favorite vegan cheese that i’ve done, it doesn’t even feel like you’re not eating real cheese. The only thing about this is that at least over here in Argentina the cachew chestnuts are pretty expensive, so i only bought a little to make this recipe. No regrets.
