I combined my two favorite recipes for pancakes and cinnamon rolls–and what results is absolute magic!
Vegan pancake rolls are a delightful and versatile breakfast or dessert option. They consist of light, fluffy vegan pancakes rolled around a sweet or savory filling. Here's a basic recipe for vegan pancake rolls with a sweet filling, like fruit or chocolate, but you can easily adapt it with your favorite ingredients.
Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups almond milk (or other plant-based milk)
- 2 tablespoons vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
For the Filling:
- 1/2 cup fruit preserves (like strawberry, raspberry, or blueberry)
- 1/2 cup dairy-free whipped cream or coconut cream
- Optional: fresh berries, sliced bananas, or chocolate chips
Instructions:
Prepare the Pancake Batter: In a large bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, mix the almond milk, oil, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Avoid over-mixing to keep the pancakes fluffy.
Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of oil. Pour about 1/4 cup of batter onto the skillet and spread it into a thin circle. Cook for 1-2 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter to make several thin pancakes.
Add the Filling: Once the pancakes are cooked and cooled slightly, spread a thin layer of fruit preserves over each pancake. Add a dollop of dairy-free whipped cream or coconut cream on top, and then sprinkle with fresh berries, sliced bananas, or chocolate chips, if desired.
Roll the Pancakes: Carefully roll each pancake, starting from one end and rolling towards the other, creating a spiral with the filling inside. Secure the roll with a toothpick, if needed.
Serve: Place the pancake rolls on a serving plate. If desired, you can drizzle them with additional fruit preserves or sprinkle with powdered sugar for presentation. Serve immediately while the pancakes are still warm.
