Hello good people! Hope all is well. Today's cooking is beetroot fried. Not my first time to post beets, this has been one of my healthy comfort foods always available.
This bright red color veggie is full of af anti oxidant, packed of essential nutrients, high in fiber, improves blood flow, increases exercise performance and lowers blood pressure.
Today I am happy to share how I cook my beetroot fry. So let's get started.
Ingredients:
Beetroot 1 medium
Fresh coconut shred 3tbspn
Onion 1 medium
Curry leaves 1 sprig
Green chili
Fresh turmeric 1 inch shredded
Spices
Mustard seed 1 tbspn
Chili powder 1/4 tbspn
Coriander powder 1/2 tbspn
Salt
Procedure:
● Prepare, chopped ingredients.
● Heat oil in a pan, once hot splutter mustard seed, curry leaves and green chili.
● Add in onion, saute till translucent.
● Add in fresh turmeric, saute till raw smell goes.
● Add in beets, mix / saute for 3 min.
● Continue to saute till half way done.
● Add in spices & salt. Mix/ saute till raw smell from spices goes.
● Add in fresh coconut shred. Mix.
● Continue to mix till done.
Beetroot fry is ready to serve and best accompanied with warm rice. A healthy, yummy and easy to cook recipe.
