we are migrants like birds when the winter starts in the North we travel to the south here in my homeland India. Here we don't have any options for mushrooms these days but we get edible mushrooms during monsoon time.
But we have lots of tropical fruits and plenty of coconuts.
Today I was making eggless macaroons from garden-picked coconut and they turned into mushrooms ha ha.
Ingredients:
1 fresh coconut meat chopped into small pieces
3/4 cup of sugar
5 cardamom
1/2 cup semolina
2 tbsp coconut oil
1/2 lime
3 tbsp powdered sugar
1 tsp cocoa powder.
first, chop coconut meat and using a mixer make it desiccated
coconut but here the fresh desiccated coconut we using.
Out of 1 coconut, I got 3.5 cups of desiccated coconut. (it was a big coconut)
in a skillet heat coconut oil we have our homemade coconut oil.
add semolina to
the oil and roast it on low heat until it starts to become aromatic and light golden color
keep aside.
mix sugar and desiccated coconut add crushed cardamom.
add 1 cup of water mix it thoroughly and put on heat.
When the mixture becomes sticky add roasted semolina. stir it well use low heat to avoid burning. Remove from heat when it is sticky enough to make small balls.
apply a few drops of coconut oil on the palms of your hands. and make lime-sized rounds/balls from the mixture. for cap
Make some long stick-like rolls for the stem also.
when it is warm fix the rounds and roll them together into mushroom shapes.
Late them dry totally.
in 1 hour they are dried enough to top with sugar glaze.
making glaze I used cocoa, powdered sugar, and lime.
used half lime juice in 3 tbsp powdered sugar made glaze saved 1.5 tbsp white glaze and in the rest I put 1 tsp cocoa. If you have some other idea like making chocolate sauce or caramel sauce it's your choice. but sure that will be the easiest way to glaze.
spread sugar glaze on each mushroom and decorate them how you want to. sprinkle some instant coffee grains some finely chopped chocolate, sugar sprinkles, or dust some cocoa on.
