My kitchen is a special place. It is a place where I relax and let my imagination run wild.
My first inspiration to cook is to imagine the face of pleasure of those who will eat my food. From there, the rest is magic. It is a journey that abstracts me and makes me happy.
In my house, it is essential to have a snack to eat in the afternoons. No matter how small it is, my family always enjoys this meal. They usually prefer sweet to savory, so I decided to prepare a dessert.
Desserts put the cook to the test, as it is an exercise in patience and attention to detail. A dessert is to be successful, its main ingredient is love, so if you combine some ingredients with some sugar, you will surely get something fantastic.
I always have fruit at home. I think it is a food with a lot of goodness. In the fruit basket, there were some peaches. I decided to make a dessert with them, but also using a flavor that my family loves like coffee.
50 grams of margarine
50 grams of cream cheese
1/4 cup of milk
4 egg yolks
2 teaspoons of instant coffee
6 tablespoons of wheat flour
6 egg whites
1/4 cup sugar
The first thing I did was to melt the margarine over low heat and added the cream cheese along with the milk. I stirred until all the ingredients were well integrated.
Beat the egg yolks in a bowl and add them to the cream cheese. The magic touch to this recipe is to add instant coffee. I removed it from the stove and let the mixture cool a little.
When the mixture is lukewarm, add the previously sifted wheat flour. You can mix well.
In a bowl, beat the egg whites until stiff with the sugar. Pour over the previously prepared mixture with wrapping motions.
I wanted my dessert to have a delicate presentation, so I used small molds to make individual portions.
To prevent the coffee cake from sticking to the molds, line them with waxed paper.
Carefully fill the molds and bake for 25 minutes at 160ºC.
Remember the peaches? Well, I cooked them in water with sugar and a cinnamon stick. Once cooked, I removed them from the syrup that formed and cut them into slices.
Now the rest is up to your imagination. I was feeling very inspired, so with whipped cream, I started to decorate each cake, and then I put peach pieces as a topping.
I didn't want to miss the opportunity, so while I prepared a good coffee to accompany this delicious dessert, I put together a whole set of photographs to save these beautiful images and share them with you.
This coffee cake was very fluffy, and the flavor contrast between the coffee and the peach was incredible. I enjoyed this moment so much in my kitchen, but the most gratifying thing was the happy face of my family.
