Currently, there are many coffee variants that are the choice for addicts to drinks that contain caffeine. The mix is even more diverse. Baristas in coffee shops are increasingly innovating to update their menu lists. As a coffee connoisseur, I feel increasingly pampered with the many choices.
A few days ago, while visiting the Gayo Highlands in Central Aceh, I took the time to stop at a coffee shop called Kenary Coffee. They already have their own plantation in an area known as the largest coffee producer in Indonesia. They also owned a coffee bean processing factory, owned their own trademark and eventually opened a coffee shop that was named after their trademark.
Gayo coffee or better known as Aceh coffee consists of Arabica and Robusta types. Both have been worldwide and have become one of the favorite menus at classy coffee outlets such as Starbucks and others.
I got information about their new menu a month ago from a post from one of their social media accounts. Their new menu has become a trending topic because of its uniqueness, namely fermented gayo arabica coffee. I was very curious about fermented coffee and have been eager to try it ever since.
This coffee is produced from a fermentation process for 3 x 24 hours, drop by drop, the production process is very limited and must be packaged in bottles so that it does not change in taste to be stored for a long time. But there is still an expiration date and it is stated on the label affixed to each bottle.
Apparently, the fermented coffee at Kenary Coffee has become the main menu of choice. But the price is three times more expensive than other coffee menus. In my opinion, the high price is worth it for the very delicious taste and because the process is limited and takes a long time. The taste of this coffee is soft on the tongue, more sour and very bitter in taste. For coffee addicts it's not a problem, is it?
According to the coffee shop keeper there, fermented coffee should only use Arabica coffee beans, this is because Arabica coffee beans have a lower Ph level, which means that the acidity level is higher than Robusta coffee. It is common knowledge, although Arabica has a high acidity level, it is safe for people with stomach acid disease.
This fermented coffee will be more delicious if drunk cold. He was not given ice, but the cold obtained from placing it in the refrigerator. At that time, initially I just wanted to try the menu of pure fermented coffee. However, the barista there managed to convince me to try the fermented coffee menu with sweetened condensed milk. The barista said, many customers who ordered the menu were successfully recommended to me.

Even though I always drink pure coffee without ever using any mixture, even though it is only given sugar. Finally, after finishing half a bottle of pure fermented coffee, I again ordered a menu that used a mixture of sweetened condensed milk, I didn't really like it. In my opinion, any mixture that is added to coffee, will spoil the taste of the coffee itself.
