Hello, I'm back from almost a month off and I came with a spectacular recipe, both to enjoy with the family, as well as to give to those loved ones 😊
It is a coffee flan, here in Venezuela we call it Quesillo, although in essence it is still a flan and this is how we are going to know it today, so that the translation is much easier to understand. Lets go cook!
The first thing is to make the coffee, in my case, I am using a Venezuelan brand coffee. I have to admit that it is not the best on the market, although for this preparation it seems excellent to me, because it has a grain with a very intense flavor, perhaps too roasted, if you will.
And all these characteristics will help us to make the coffee flavor predominate a little. We are also going to prepare it with little water, two tablespoons of coffee, for each cup of water. After preparing it, let it cool to room temperature 😊
The second step is to mix the other ingredients in a container, which are: 4 eggs (one for each mold), a cup of sweet condensed milk and a cup of coffee.
Here I clarify, I am using the same cup of condensed milk to measure the portion of coffee, that's why it looks lighter in color.
Then, we mix well and pour envelopes into our small aluminum molds. To which we add a spoonful of caramel in the bottom 😊
To cover the molds, I used plastic. I simply cut a bag and with the help of a kitchen rope, I fixed them as a lid. You can use aluminum foil if you wish 😊
We must take the molds already covered, to a pot with 2 or 3 fingers of water. Then, we take the covered pot to the burner. Using the lowest temperature we can.
This is known as: direct bain-marie and we are going to be doing it for approximately half an hour. It will depend on the size of your mold 😊
Once the half hour has passed, we let it cool a bit and then we do what you see in the image. Unmold 😊

Now, let's talk about what matters to us, the taste... IT TASTES GREAT!
Let's see, I'll try to explain it better, it's a super smooth dessert with a delicate texture, when you cut it with a spoon, first there is the firm layer of caramel that we put at the bottom and then it's like cutting butter 😍
And when you put it in your mouth, first you feel the creaminess and the sweetness of the condensed milk and then PUM!, the flavor and aroma of coffee comes to you from everywhere, a delight, really 😊
After a few days, the coffee flavor intensifies even more, this can last a week in constant refrigeration, so I recommend eating a part on the first day and a part on the third day, you will be surprised by the change in texture and flavor 😊
