My today's creation is Crispy Bread Cutlets with paneer filling. Bread Cutlets are great snacks made with bread and mashed potatoes however my recipe is with little twist, I added the filling of paneer to make it little different from the usual one and it turned out great. Crispy fried bread from outside and juicy paneer filling inside.
To start with the recipe, lets check out the ingredients first.
The main ingredient of this recipe is white bread slices, potatoes and paneer. To make 10 cutlets, we need :
- White bread slices - 10 Nos.
- Potatos - 4 Medium Sized
- Paneer - 200 Gm
- Onion - 1 Big Sized
- Fresh Coriander leaves - 1 Bunch
- Red Chili Powder
- Cumin Powder
- Chaat masala
- Garam masala
- Salt
- Oil for frying
:: PREPARATION ::
Wash the potatoes, cut into pieces and boil.
Remove the skin of the boiled potatos.
Chop onions into small pieces.
Grate or crumble the paneer and chop coriande leaves.
:: RECIPE ::
Add chopped onions, coriander leaves and dry spices chaat masala, garam masala, cumin powder, red chili powder and salt in the boiled potatos. Mash the potatoes and mix everything together.
Add some chopped onions, coriander leaves and little salt in the grated paneer also.
Mix the paneer well and make small balls.
Grease the palms, take little big portion of mashed potatoes, make it flat and put the paneer ball inside the mashed potato and roll it in such a way that potato will fully cover the paneer. Give it your desired shape.
Make all the potato rolls like the same way and keep it in the freezer for sometime.
Take the bread slices and remove the sides.
Take one slice, dip it in the water, remove excess water by pressing it between your palms and put the potato roll on the bread slice and cover it properly and seal the sides. Once done put the prepared cutlets in the freezer for some time.

Our cutlets are prepared now we have to fry the cutlets.
Heat the oil in a deep bottomed pan for frying. Check if the oil is hot by putting a small bread piece in the oil.
Once the oil is hot, put the cutlets in the oil. Keep the flame medium.
Once its golden brown from one side, flip it carefully on the other side so that cutlets will be fried from both the sides.
Once fried from both sides, remove it on a kitchen tissue to absorb excess oil.
Cutlets are ready. Serve the cutlets while hot. It tastes great with green mint coriander chutney or tomato ketchup. You can have it with any other dip also as per your choice.
