Today's I will be sharing with the step by step preparation one of my tribal food in regard to the semi contest of the community. I came from the Igbo tribe which is the eastern part of Nigeria, and the most popular food for my tribe is soup and swallow and here I will be writing about ofe onugbu (bitter leaf soup), it's health benefits and how to prepare it.
The bitter leaf soup is prepared with so many ingredients that is very healthy to the body of which are bitter leaf (onubu), cocoyam, ogiri (locust beans)and so many other which I will be listing below. But first let's talk about the health benefits of the above listed ingredients
Health benefits of bitter leaf
Bitter leaf helps to detoxify the body and improve the immune system.It helps to reduce the risk of cancer in the body. It also help improve fertility, and also aid to reduce weight loss. Bitter leaf is also a good source of vitamin, minerals and proteins which also help to reduce stomach aches.
Benefits of cocoyam
Cocoyam helps to control sugar level, prevent cancer, and reduce fatigue.
Cocoyam is also a good source of potassium that helps to reduce cramps.
Locust beans on the other hand enhances the reduction of cholesterol.
It helps to control blood sugar levels in the body, improve good sight, and also aid in digestion of food in the body. With all the health benefits of these basic ingredients you can see that consuming bitter leaf soup can help us live a healthy life.
Other Ingredients
- Washed bitter leaf
- Cocoyam
- Ogiri (locust beans)
- Meats/ stock fish
- Palm oil
- Dry fish/crayfish
- Pepper
- salt
- Seasoning cube
Preparation
Peel to remove the outer layer of the cocoyam wash with clean water and boil till it becomes tender, after boiling remove from the water and pound in a mortar or you blend with a blender and set aside.
Wash the meat and stock fish add seasoning and salt and boil for 10 minutes.
Add palm oil and allow to boil for 2 minutes, add ogiri (locust beans), crayfish, dry pepper, and cook for 5 minutes.
Add cocoyam paste and allow to cook again for another 5 minutes or till the cocoyam are all dissolved then add the bitter leaf, seasoning cube, salt and allow to cook for another 5 minutes then turn off the heat and now our delicious soup is ready to be served.
The soup can be served with any kind of swallow be it eba (garri), fufu or semolina any one of it can go really well with our delicious bitter leaf soup.
